Last winter I had the opportunity to try cooking with grapefruit† and grapefruit juice for the first time (here, here and here) - it was a really fun exercise and I've continued to enjoy using citrus fruits and juices in my cooking ever since. So when I was approached again to take part in this recipe challenge, I accepted with pleasure!
I will admit to a certain amount of trepidation about the contest aspect of the challenge, though...I love to cook, but I'm not entirely confident with my presentation skills! But be that as it may, I had a wonderful time trying these delightful recipes, and it was a great reminder what an excellent addition Florida citrus fruits and juices are in so many recipes.

I loved these muffins. In fact, I'm enjoying one with my morning coffee as I write this review. I'm the kind of person who detests the oily store-bought variety of muffins, sticking with home-made muffins (and usually cutting the oil in those, too). These muffins, though, are perfect. No greasiness - just a perfect texture both inside (soft but not oily) and out (crunchy). The bran flavour was lovely, and the hint of grapefruit was both fresh and tart: a perfect breakfast choice. I always save my favourite part - the muffin-tops - for last, and these didn't disappoint - the grapefruit honey glaze gives them a lovely shine and a kick of sweet grapefruit flavour. Superb!

While I have used orange juice in many recipes I have not had the opportunity to use grapefruit†. I was pleasantly surprised by how much I enjoyed its refreshing flavour. Even better, this recipe has been reviewed by Heart and Stroke Foundation dietitians and meets the nutrient criteria based on Canada's Food Guide. The grapefruit muffins had a subtle grapefruit flavouring that both my husband and I found extremely pleasing. I was concerned that the grapefruit juice would make the muffins sour and tart; this was far from accurate. The muffins were perfectly balanced in both sweetness and flavour. My husband and I both agreed that the muffins would make a perfect breakfast or mid-morning treat. They are packed full of fibre and whole-wheat goodness. There is no mistaking that these muffins are chock full of bran. They also contain no white flour; instead whole-wheat flour is used. The use of bran and whole wheat creates a rough and crunchy texture on the outside, while the middle remains soft. The muffins were perfect with a tall glass of milk. My 10-year-old daughter really enjoyed their flavour and thought they would taste really great cut in half with a little smear of margarine. My 7-year-old thought they tasted a little too healthy and was a bit overwhelmed by the bran texture.

Makes 12 muffins
Ingredients
375 mL (1 ½ cups) whole wheat flour
5 mL (1 tsp) baking powder
2 mL (½ tsp) baking soda
1 mL (¼ tsp) ground cloves
75 mL (1/3 cup) soft non hydrogenated margarine
175 mL (3/4 cup) packed brown sugar
1 egg
375 mL (1 ½ cups) natural bran
250 mL (1 cup) 100 % pure Florida Grapefruit† Juice
Ingredients
375 mL (1 ½ cups) whole wheat flour

Kath muffins just seem so much more appealing. I also love the top of the muffin and hers are so golden in color I think I will try and make some today.
This was a tough one because although I thought Carol's photo was better, I thought Kath's muffins actually looked like they would taste better. So, I voted for Kath's.

This was so hard to pick only the one but I chose Kath's because it was a bit more appealing to me . I have never used grapefruit in muffins and am eager to try both of their recipe's!

I voted for Kath's muffins as they actually look much yummier. Although the grams of sugar is a little high for a diabetic person I may just have to try one out as the amount of fibre is quite good. I love bran muffins and enjoy grapefruit and have never heard of a muffin with grapefruit juice. I will definately be trying these out on my teenage girls. One is really into eating healthy while the other not so much, but is willing to try new things.
I will have to let you know the results.

Since I was supposed to vote on just the picture I went with the 1st (Kath's) since the color popped out at me.
Both reviews make me want to whip up a batch right now (which yay! I could do, now that we have a stove after three months of renovating) but the the warmth of Kath's photo makes the muffins particularly appealing, so I prefer that one.

I voted also for Carol's muffins. I read the reviews and compared the pictures. Carol's photos were clean, crisp and fresh. Kath's pics were dark and I didn't like the closeup of the front muffin. I also related better to Carol's review. She hit on several things that I was able to relate to. I also wondered if the grapefruit would make the muffins sour, she addressed that. I too, have children a 10 year old and a six year old so it was important to me to read the kid taste test. Good job on muffins well done!

I loved Kath's photo and description best. The photo made my mouth water and her write up seemed very personal and from the heart and it was also very descriptive in the results - not too oily or greasy and perfect texture. kinda weird how the same recipe can turn out looking so different! i enjoyed both reviews....they both made the muffins sound very yum! as for the looks of the muffins, i went with carol as i thought they looked more like bran muffins...but the muffins kath made look yummy too...i am very indecisive!!

I voted for carol's muffins (#2) because of not only the appearance of the muffins in the phot, but I too enjoyed the comments about her family...I just finished baking these, and I must admit, they are nice and crunchy but not overly crunchy, and they taste DIVINE!!
The only thing I did differently was I substituted the brown sugar for Splenda brown sugar, as my son is diabetic.

Kath's picture looked more fresh from the oven and home baked, but Carol's presentation was more magazine-like. I chose Kath's since they looked the most home baked and the colour just popped and screamed "Grapefruit Muffins". I can't wait to try this recipe as I know my husband will love them. My daughters may or may not like them, but I know that they will try them. If they don't like them, all the better - more for my husband and I!

I agree that Kath's muffins appear more flavourful. Lighter in colour, they look as though they actually taste lighter, more citrus-y. Hers would be my first pick. I can almost see a tiny ray of sunshine peeking through the crack in the top of the muffin in the foreground! This shot would definitely inspire me to try the recipe, since I have always adored the refreshing, clean, summery taste of citrus ANYTHING, particularly grapefruit. Nothing says tropical breezes and NO SNOW like something with the essence of grapefruit (or any other citrus fruit, for that matter). I'm even drawn to citrus-inspired fragrances, too.
While I'm sure Carol's muffins are delicious, they look exactly like every other bran muffin I've eaten in my life. Flat, crunchy, almost tough and chewy. I would pass on them, on sight alone. Sorry Carol. :(

Such a close vote, I admit I had a hard time picking too. I liked Kath's description and wished I was eating one while I had my cuppa tea and entering!
My suggestion for Carol is to maybe add a wee bit (1/4 cup) of apple sauce if her muffins were too dry for her kid's liking.
They both make the muffins sound yummy and for sure I'll be trying this recipe. Do pick Kath's review mainly for the picture.

voted Kath the color is what drew me in they looked to be more flavorful without even tasting just based on looks alone. Carol's were very neat and uniform but my taste buds were crawling away at the thought of what they might taste like due to their lackluster colour.

I think my family would really like a new twist on an old favourite, I choose Carol's.

Kath's muffins look better in colour but Carol's muffins are decorated so nicely.
Although they both look and sound yummy, the golden colour in Kath's photo makes it just a little more appealing. Both make me want to go to the kitchen and start mixing.
For me, it was no contest. Kath's all the way. Sorry Carol, I'm a new subscriber and don't know one of you from the other yet, so no offense intended. Although some comments seemed to imply that there were two different recipes used, I saw no indication that it wasn't the same recipe. I am not an avid muffin fan, and in fact, rarely find a muffin I'm really fond of. But, as I am a citrus, and especially grapefruit, fan, I would not hesitate to try these, based Kath's picture and description. I am sorry to say, I would probably not try Carol's. They don't look appetizing (as most bran muffins don't), and, not being a muffin fan, wouldn't think much about them. But, even not being attracted to muffins, would be tempted by Kath's! I agree that Carol's photography is very nice, though.
I do have to disagree with both Carol's and Kath's use of the word "opportunity", though. It makes it sound like they have never before had a chance to use grapefruit in cooking. lol Sorry, just feeling nit picky, late at night.
Grapefruit muffins. I love grapefruit, but never seem to take the time to eat it. These would be a great alternative and the glaze, yummy.

The first muffins just looked bright and refreshing like grapefruit is. I often put a glaze on my fruit loaves but have never thought of putting it on a muffin. It just makes it that much fresher tasting. Now I can't wait to try making these.

Grapefruit!! Wow that sounds interesting!! I ove my aunties recipe for Orange Chicken... that's delightfull and as healthy as can be! And my sisters orange pound cake, yummy!! This would probably be the first grapefruit incorporated recipe i've come across!! My parents being great grapefruit fans wud probably love it!!! I'm going to have to try the recipe!
As i believe presentation (and the look of food) to be equal to the taste of food (so for the taste i'd have to try both recipes), according to the pictures kath's muffins look much more appealing. I would also agree, may-be it is the light effects or the difference of when and where the pictures were taken.
These just looked a little healthier and at my age I need all the health I can get. Both looked good though! :--))

Grapefruit juice would be a perfect substitute for any muffin recipe that called for a citrus juice. I like the texture and colour of Kath's muffins. They appear more moist and more plump, and have a shiny glaze to the tops. Yum, yum.

I loved Kaths muffins. The description she provided was quite clear, and truly made me want to give such a non-traditional baking item a try. Loved that she discussed the textured, that she mentioned they were non-greasy; and suggested it would be a great breakfast choice. More so, I agree, muffin tops are the best part of the muffin, and with this recipe it definitely makes me want to whip up a batch.
