This week's recipe is: Hearty Lentil Orange Soup

Makes 6 to 8 servings

Ingredients:
10 mL (2 tsp) canola oil
1 onion, finely chopped
4 cloves garlic, minced
1 jalapeno pepper, seeded and minced
10 mL (2 tsp) chili powder
5 mL (1 tsp) ground cumin
500 mL (2 cups) red lentils
750 mL (3 cups) 100% pure Florida orange juice
875 mL (3 1/2 cups) sodium-reduced vegetable stock
75 mL (1/3 cup) low-fat plain yogurt


Directions

  1. In a soup pot, heat oil over medium heat and cook onion, garlic, jalapeno, chili powder and cumin for 5 minutes or until softened. Add lentils and stir to coat well for 1 minute.
  2. Add orange juice and 500 mL (2 cups) of the vegetable stock and bring to a boil. Cover and simmer for about 20 minutes or until lentils are tender. Stir in remaining stock and heat through.
  3. Serve in shallow soup bowls with a dollop of yogurt.

Tip: For a smooth soup, puree the soup in batches in a blender and heat through.

When I told my family I was trying a new soup recipe, it didn't phase them since I am forever experimenting with new soup recipes.  My kids and husband tend to be meat-and-potato lovers so I often use the appetizer course to squeeze in the fruits and veggies; we have soup, salad, or veggies and dip every night.  As the weather becomes cooler, we find ourselves eating soup more often than not.

Making this soup was super-easy and super-fast; I can honestly say that I got the whole thing prepared in the 15 minutes I was home between picking my son up from school and dropping my daughter off at trampoline.  By the time I got home 30 minutes later, it was simmered to doneness (and made the house smell amazing in the process). While the lentils mostly melted away, I chose to blend it so it was completely smooth, one of the tips from Florida Citrus.

I served the soup along with homemade cheese pizza; together the two made up a balanced meal for our Meatless Monday dinner.  As part of an effort to become healthier and environmentally aware, we are choosing to eat more fruits and veggies and less meat.  I have to say, though, there was more leftover pizza than I anticipated, not only because the soup was so good, but also because it was so hearty and filling.

When I was serving the soup, my daughter was a little wary of the dollop of yogurt so I left it off hers.  I have to say though, that was the part of the soup I personally liked best: the cool creaminess of the yogurt balanced out the rich flavours of the lentils and cumin in the soup. 

I wasn't the only one who liked the soup; everyone in my family enjoyed it and had this to say:

Maya: It tastes like oranges and I like oranges.  Also, it's not chunky so that's good.

Billy:  I'm not sure what it tastes like or why I like it but my mouth just wants to eat more.

Husband: Its good.  And hearty.  (he's a man of few words)

Overall, the soup was a success.  It was fast, easy, healthy, and yummy.  And while not all ingredients are local, I know that Florida Orange juice is always in season and always amazing so I feel good about cooking with it any time of the year.

As the cold days of winter settle upon us there is nothing more delicious than a warm cup of soup. For lunch or dinner, soup makes a fantastic addition to any meal. Not only is it comforting, it is also healthy for you too.  At this time of year, especially after the holidays, I try to incorporate as many fruits and vegetables into my family's diet as possible. This can be challenging as winter does limit the amount of fresh produce available so I'm always excited to find a recipe that is packed full of easy to find ingredients that are both healthy and delicious. The Hearty Lentil Orange Soup recipe sent to us from the Florida Department of Citrus is a great combination of both these elements.

The Hearty Lentil Orange Soup was such an easy and simple recipe to prepare. I was quite intrigued by this recipe as I've made quite a few split pea soups in my days but have never tried red lentils. The other surprising element in this soup was the addition of orange juice. I couldn't wait to see how these flavours came together.  I am happy to report that this soup did not disappoint. The best way to describe the taste is zippy and hearty. The citrus flavour enlivens the soup and adds a burst of flavour to each bite.  The verdict was unanimous - the whole family felt the same way about the soup; they found the pureed texture very appealing and enjoyed the interesting combination of spices and orange juice.

I make it a priority to serve my family foods that are both great tasting and good for us. The daily choices that I make as a mom do impact the health and wellness of my family.  These small choices really add up. During the winter months it's so easy to hide away inside our warm and cozy homes. So why not get outside and make a snowman with your kids, or go tobogganing, both activities are so much fun. Also try new recipes that combine interesting flavours and pack a great healthy punch.

I workout Monday-Friday on my treadmill. It's a great way to start my morning and leaves me feeling good about myself all day.

What I do to feel better is read. I love escaping with a great book.

Taking a warm hot bath after a long day at work is my favourite way to feel better.

A good book a cup of tea & petting my cats!

I love doing my yoga and then taking time relax by reading. We also enjoy making almost every meal from scratch so these recipes are going to be great.

Getting 30 mins of exercise three times or so per week helps you to feel better and gives you more energy!

I do yoga and plates every week and I love just turing the t.v., computer and BB off for 1/2 hour while I have my tea!

i'm excited to try these as i have a bag of red lentils and no idea what to do with them! :-)

i'm a pilates junkie and am now pursuing yoga with a vengeance and am feeling so awesome right now.

In order to feel better I end my day by allowing myself 5 minutes to dwell on any issues I had that day and then I drop them. I believe by maintaining good mental health is key to your entire health as a whole. When I wake up every morning I begin my day by stretching and I think about how lucky I am to have another day with those I love. This brightens my day and makes me have a more positive attitude towards my day.
When you have a good day you feel more energy to exercise and seem to eat less and healthier.

I like Cayla's presentation best. And in order to feel better, I exercise regularly. When I miss my workouts for some reason or another, I can really feel it and really miss it.

My workout routine consist of walking up in down the stairs and go for a morning jog/walk with my daughter. Also i just love to do zumba fitness at home its fun! As for food choices i've been doing good balancing my food!!

The little things are so important when it comes to feeling better, and there are so many little things that add up! For example, taking time to meet with a friend for coffee, taking the dog for a walk to the park, and eating lots of fresh vegetables and fruit. This soup looks yummy!

I like to sling into a nice hot aromatic bath and read a book. This is a bit of ca challenge for me since I broke my knee cap just before Christmas. The other thing I like to do is GO TO THE DOG PARK for a nice long walk. Really,it s so wonderful it could be a therapy for people feeling sad or even depressed. It always lifts my spirits; the people are friendly and the dogs are always happy and eager to meet new friends. This too must wait until I get the bone healed... The soup sounds exciting. I have a food blender that will whisk it to creamy smoothness.

To feel better I like to have a nice warm shower and apply some aromatherapy products after shower!

I love doing yoga and my ritual of morning meditation. I also love walking in the green belt behind my house, it's like walking through a large park or forest. I enjoy spending time with my furry babies, reading a good book, gardening, and whipping myself up something up in the kitchen to lift my spirits.

I take a long hot bubble bath to help me relax.

Nothing beats taking in all of the smiles & giggles of my baby! Prior to that music and hot baths used to do the trick but now I find she infuses such positive energy that one cannot help but feel better. The best remedy in a tiny, adorable package.

I talk long walks and exercise daily.

Taking time for a warm bubble bath

When I want to feel better I always call one of my daughters so that I can hear or talk to my grandchildren. There is nothing better than hearing "Nana I love you!"

To feel better I try to remember this "Define yourself by your best moments, not your worst. Find one thing you did do right today and focus on that." Thanks

to make myself feel better after a stressful day or anything really, I take a really hot bath with a lush bath bomb and then cuddle up on the couch with my dog. shes so fluffy its like getting lost in a cloud

I go to yoga.....it is magic!

I enjoy soaking in the tub and reading a magazine once the kids are in bed

I take a whirlpool bath and feel great and refreshed.

I eat as many fruits and veggies as possible! such a great feeling knowing how much good I'm doing for my health

I take a pilates class twice a week!

I walk outside every chance I get, make sure I'm well-hydrated, and stick to eating what I know makes me feel good (no junk food - learned that lesson the hard way!).

I have a 3 year old and a 2 month old so finding time to do things for myself is often difficult but I find that getting outside and running around with the kids is a great way to get more energy. Taking warm baths with a good book is a great way to relax.

I use a few strategies to tackle the winter blues and help me feel better. I picked up a light based alarm clock. For about half an hour before I wake up, it slowly brightens the room - you would be amazed at the difference this makes. I add more citrus products to our meals to boost our vitamin C intake. I add squirts of fresh citrus juice to water, for example, instead of drinking pop. Also, I head straight for the comfort food, which for us, includes a lot of Thai influenced meals - and they include a lot of citrus products in them, lemon juice, lime juice, etc. Also, I book a spa day in January or February every year, to focus on me for a few minutes, to relax, and to rejuvenate.

I feel well by getting out every day for a long walk with the dog. I also eat healthy foods that are good for me. I look forward to trying this soup.

I have been trying to add more fibre into our diets so I have been using chickpeas, beans, and lentils more frequently and there are many great combos. This soup sounds amazing as I particularly love red lentils so I think that I will make it this weekend (minus the yogourt since most of my family has milk protein allergies, thanks for not adding yogourt into the actual dish except as a garnish).

when i'm down or blah, or feel fat, i go to the gym or for a jog. nothing like it.

Playing with my 3 kids makes me feel better. My 4 year old is hilarious and would put a smile on anyone's face (especially if you were having a not-so-great day).

I read and walk alot to feel good

I've recently started working out; every morning before I step into the shower I now take time to use my stationary bike.

We try to go for a family walk every day.

I try to go for walks everyday and then ride the stationary bicycle and jump or skip rope.

I meal plan so that we have balanced meals and my husband and I walk everynight on the treadmill after my son goes down for the night.

Lunch hour classes Mon Wed and Fri and run on Sat

I get extra sleep. I always feel better after sleeping.

I refuse to eat my lunch at my desk! I'll take my brown-bagged lunch to the food court just to get away from everything in the office and have some solid (continuous!) quiet time to myself.... which is VERY rare for this harried mom of three boys, aged six and under!

make large meals so there is plenty of leftovers for a night you do not feel like cooking. We all have days we just do not wanna cook and ording out is not always good for us or make us feel good.

I go out for walks several times a week, and have a hot bath once or twice a week. And go on the treadmill if the weather is nasty out.

I take vitamin B12 and try to exercise daily!

To feel better, I give some well deserved me time! I do this by going to the spa, reading a book or even cooking up a storm in my kitchen. I always feel better when I am in my kitchen!

I like Carols recipe plus I try to have a schedule for my exercise regime!

I was sceptical upon reading the recipe title - but after reading the ingredients and the reviews I think I will be making this one!

I liked Cayla's review and presentation. Her version looked much thicker than Carol's. As to how I try to feel better, my daughter and I go for a nightly walk. Not only does this give us some quality time together, we get do discuss her day and also just take in the fresh air. Sometimes it's a short walk other times a longer one. It depends on how my feet feel as I have had many surgeries and sometimes am in too much pain to walk far, but we do try to go every day.

Sometimes a suggestion just gets me to want to try something, oranges and crackers, interests my tastbuds. My most enjoyable, relaxing time is spent following my dog as she leads me on a 4 wheeling dog walk, she goes anywhere and everywhere, fearless and adventuresome.

Go for a long walk alone, a fitness class or getting lost in a good book helps me to relax

Making sure I get out into the fresh air at least once a day is ESSENTIAL to my well-being. Even if it's forty below, going for a quick walk makes me feel so good both physically and emotionally!

I eat a lot more vegetables than I used to. I have always liked vegetables, but now I ensure my plate is at least 1/2 veggies at lunch and dinner. I also eat out less.

I Just started going back to kickboxing and will be doing that Monday, Tuesday and Wednesday each week & I'm going to Zumba on Thursdays! Feels so good after! Well not the pain part but you know what I mean!!

Take an hour each day to hand the kids over to hubby and recharge my "batteries", usually watching something on TV or take a bath.

Each day I walk along the beach - if it's stormy and the tide is up, I walk along the sea wall........it never fails to both relax and energize me!

I eat only fresh healthy foods.

My husband has recently been diagnosed with type 2 diabetes, in my effort the help him maintain his diet, I have adopted it also. I feel much better myself, increasing my fruit and veggies, and cutting down on the meat portions. Gone are the white bread, crackers, chips, that filled are cupboard, that are so easy to reach for when you are feeling a bit hungry, replaced with healthy snack of fruits, vegetables and nut. His numbers are down, and we are heading in the right direction, but I do miss my chips from time to time.

Right now I don't do anything to feel better & that's the problem.

A good glass of wine with friends and lots of laughter. Laughter always make me feel better....

Doing yoga makes me feel better

Eating a nutritious breakfast and reading the paper while I enjoy my morning coffee.

I try to eat well, get plenty of sleep and make sure that I put aside at least a half hour in the evening just for me..sometime a walk other times it might be reading

I read a book to releive stress and I make sure I get 7-8 hours of sleep each night

I enjoy swimming 4 times a week and going for walks.

To feel better, I read, exercise, take a warm shower or have a restful nap. my most favourite way to feel better, though, is to spend time with my 4 kids - reading with them, playing with them, snuggling with them...Any time with them lifts my spirits.

Love reading for an hour each evening.

i try to get to the gym a couple of times a week because that makes me feel better. Much much better.

It's funny that I came across this as I'm drinking my morning Florida orange juice! I always start my day with a glass of Florida orange juice before I take a 30 minute walk to get me ready for the day ahead. It's my favorite way to start every day and I feel refreshed and awake! No caffeine needed!

Things I do to feel better - spend time with family and friends, or have a nice long nap.

After I plan my week, it frees my mind to relax with yoga, tea, and a good novel.

I meet my friend and we take our dogs for a walk. Provides exercise, good company chatting and the dogs love it.

A great work out and time with the family.

I buy myself flowers. I currently have cheery yellow ones on my kitchen counter.

I pick up a great book that takes me away and allows me to just relax and when I'm done it I feel amazing...

i read a great book, go on the treadmill at least 3 times a week, spend time with my kids, watch a good movie or tv show - i'm watching Parenthood right now and really enjoying it. coffee with a friend, a walk on a sunny day

Mondays and Thursdays the YMCA has programs for my little boys, so I get an entire two hours to myself in the gym! Love it!!

The one thing I do religious to Feel Better is take the stairs at work... That little bit of exercise helps relieve stress, works my muscles, etc. I also take tonnes of Vitamin D during the winter months.

I fit exercise in everyday. Rather than taking a bus to work I walk 1 km each day heading to work and then again back home. NO excuses. It's so easy to say you don't have time, but if you make even small changes you can get in exercise each and evey day.

I like Carol's review. To feel better, I go to kick boxing classes and I try to go for walks five times a week.

I do 40 minutes yoga every day, and it is great to start the day. I can't wait for spring/summer so i can do my yoga outside on my deck :)

To feel better i like to take a walk with my daughter out in the fresh air on a clear day.

I have spent the better part of my 30s and 40s trying to find ways to feel better. I have had several bouts of depression and this is the best that I have felt in my life. I take yoga twice a week. This not only helps my body to relax me but I also feel that it energizes my mind. I sleep better and I feel encouraged with my progress.
