Comfy Old Fashioned Russian Apple Cake

Tonight is one of those nights. Hubby is out at a function and I'm at home with the boys figuring out what to have for dinner. It's very tempting to just go out to a local restaurant as there are many great choices within walking distance. It's also tempting to just order in. But instead, I looked in the fridge and the pantry and made TUNA surprise! The kids ate it up faster than I could clean up the pots and pans! 

But they are DESSERT MONGERS. So, again, I look around to see what we have existing. We still have apples from our neighbours...and then I remembered!

My BFF Katya (she's the one who does the Celebrity Dish Blog here) gave me her family recipe for Old Fashioned Russian Apple Cake...like YEARS ago! I don't know if she remembers giving it to me but it's a keeper!  It's quick and easy to make!

Ingredients:
3 apples, peeled, cored, cut into small pieces
3 eggs
1 cup sugar
1 cup flour
1 tsp cinnamon

Method:
1. In a mixing bowl, add eggs and sugar and whisk until combined.
2. Add flour and cinnamon and whisk.
3. Stir in the apple pieces.
4. Pour into an 8" x 8" non-stick pan (or lightly greased regular pan).
5. Sprinkle granulated sugar over top.
6. Bake at 350F for 1 hour.

That's it.

Now to jazz it up...although I prefer it as is. Warm up caramel sauce and drizzle over top when warm or top with ice cream if you choose.

It's comfort-food and it's not too fussy. Just simple and yummy. 

Sometimes we just want that, right?
